I love overnight oats, they are so easily adaptable to suit what I have in my fridge or what’s in season, and our among my favourites recipes. its also very comforting to know i have breakfast all ready in the morning.
I made this recipe using Coconut Kefir, a new obsession of mine. I am all for anything that’s good for gut health and this breakfast contains billions of live bacteria.
It makes for the creamiest oats ever and takes it to whole another level of yumminess.
I used the strawberry flavour but they do plain version or if you’re very good make your own kefir.
I kept the oats simple and added nuts and a few seeds on serving, if you’re using a plain kefir adding vanilla, cinnamon or cacao powder makes a tasty addition. You can top this with whatever takes your fancy.

Ingredients

1 cup rolled oats I used sprouted by Rude Health
1 cup coconut kefir I used Coyo strawberry Kefir
1 cup fresh coconut milk from chiller not tinned.

To serve
Extra splash coconut milk
1 cup strawberry sliced
Juice half a lemon
1 tbsp. maple syrup
½ cup chopped raw almonds
1 tbsp. chia seeds
A few little mint leaves

Instructions

In a bowl or container with a lid, add the oats kefir and milk. Stir to combine and place in the refrigerator overnight.

In the morning take your strawberries and thickly slice, add the lemon juice and maple and stir to combine. Set aside whilst you chop your nuts and prepare any other toppings you fancy.

If after giving the oats a stir you think it’s a little thick for your taste, add a little extra coconut milk to loosen.

Top with the strawberries nuts, seeds and mint.
